Holiday time can wreak havoc with your little one\u2019s regular mealtime routine. These recipes are quick and easy to prepare, so you can fit them into your schedule and make sure your child is getting a healthy, nutritious supper, no matter how busy you are.<\/p>\n\n\n\n

TODDLER-FRIENDLY CHICKEN CURRY<\/strong><\/p>\n\n\n\n

Adding flavourful spices to your toddler\u2019s meals is a great way to develop their tastebuds and make them open to trying different foods. This chicken curry is so easy \u2013 use shredded rotisserie chicken or any leftover chicken breasts from last night\u2019s supper, then stir through Squish 100% Fruit and Veg Puree<\/strong> to make sure they get a healthy dose of veggies too. Ingredients<\/strong><\/p>\n\n\n\n

1 x 110ml<\/strong> Squish 100% Butternut + Carrot Puree<\/strong><\/p>\n\n\n\n

1Tbsp vegetable oil<\/p>\n\n\n\n

\u00bd onion, chopped<\/p>\n\n\n\n

\u00bd red pepper, seeded and chopped<\/p>\n\n\n\n

200g ready-cooked rotisserie chicken, shredded.<\/p>\n\n\n\n

\u00bd tsp mild curry powder<\/p>\n\n\n\n

\u00bd tsp dried ginger<\/p>\n\n\n\n

175ml chicken stock<\/p>\n\n\n\n

Method<\/strong><\/p>\n\n\n\n

Heat oil in a pan over medium heat and fry the onion and pepper until softened. Add spices and stir well. Add a little stock and deglaze the pan, then add the rest of the stock. Cover and simmer for 10 minutes. Add cooked chicken then simmer for a further 5 minutes. Take off the heat and stir through the puree. Serve with cooked rice.<\/p>\n\n\n\n

TIP: <\/strong>Instead of serving with rice, pop curry into mini pitas.<\/p>\n\n\n\n

VEGGIE FRITTERS<\/strong><\/p>\n\n\n\n

Make sure to take this simple recipe along if you\u2019re heading off on a self-catering holiday \u2013 it\u2019s so simple to make and your little one will love these tasty fritters. Keep half of the cooked fritters aside so you\u2019ve got a healthy, easy-to-eat snack on hand when you\u2019re out and about exploring the next day.<\/p>\n\n\n\n

Ingredients<\/strong><\/p>\n\n\n\n

1 x 110ml Squish 100%<\/strong> Butternut + Carrot Puree<\/strong><\/p>\n\n\n\n

500g sweet potato, cooked and mashed<\/p>\n\n\n\n

1\/3 cup rice flour or corn flour<\/p>\n\n\n\n

Vegetable oil for frying<\/p>\n\n\n\n

Method<\/strong><\/p>\n\n\n\n

Mix mashed sweet potato and puree, then add flour. Heat oil in a large frying pan. Drop mixture into hot oil and allow to cook for 3 to 5 minutes, turning once. Drain on a paper towel and allow to cool slightly. Serve with Squish Yogi 100% Fruit Medley and Yoghurt<\/strong>.<\/p>\n\n\n\n

TIP:<\/strong> These are delicious cooked in the air fryer \u2013 simply brush with oil and cook.<\/p>\n\n\n\n

1 cup buttermilk<\/p>\n\n\n\n

2 cups all-purpose flour<\/p>\n\n\n\n

2 tsp baking powder<\/p>\n\n\n\n

1 pinch salt<\/p>\n\n\n\n

Method<\/strong><\/p>\n\n\n\n

Combine ingredients in a mixing bowl and allow to stand for half an hour. Pour batter into waffle machine and cook until golden.<\/p>\n\n\n\n
