Easy supper recipes for the holidays
Holiday time can wreak havoc with your little one’s regular mealtime routine. These recipes are quick and easy to prepare, so you can fit them into your schedule and make sure your child is getting a healthy, nutritious supper, no matter how busy you are.
TODDLER-FRIENDLY CHICKEN CURRY
Adding flavourful spices to your toddler’s meals is a great way to develop their tastebuds and make them open to trying different foods. This chicken curry is so easy – use shredded rotisserie chicken or any leftover chicken breasts from last night’s supper, then stir through Squish 100% Fruit and Veg Puree to make sure they get a healthy dose of veggies too. Squish Purees are made using quality fruit and veg and contain no colourants, preservative or flavourants – plus they have no added sugar.
Ingredients
1 x 110ml Squish 100% Butternut + Carrot Puree
1Tbsp vegetable oil
½ onion, chopped
½ red pepper, seeded and chopped
200g ready-cooked rotisserie chicken, shredded.
½ tsp mild curry powder
½ tsp dried ginger
175ml chicken stock
Method
Heat oil in a pan over medium heat and fry the onion and pepper until softened. Add spices and stir well. Add a little stock and deglaze the pan, then add the rest of the stock. Cover and simmer for 10 minutes. Add cooked chicken then simmer for a further 5 minutes. Take off the heat and stir through the puree. Serve with cooked rice.
TIP: Instead of serving with rice, pop curry into mini pitas.
VEGGIE FRITTERS
Make sure to take this simple recipe along if you’re heading off on a self-catering holiday – it’s so simple to make and your little one will love these tasty fritters. Keep half of the cooked fritters aside so you’ve got a healthy, easy-to-eat snack on hand when you’re out and about exploring the next day.
Ingredients
1 x 110ml Squish 100% Butternut + Carrot Puree
500g sweet potato, cooked and mashed
1/3 cup rice flour or corn flour
Vegetable oil for frying
Method
Mix mashed sweet potato and puree, then add flour. Heat oil in a large frying pan. Drop mixture into hot oil and allow to cook for 3 to 5 minutes, turning once. Drain on a paper towel and allow to cool slightly. Serve with Squish Yogi 100% Fruit Medley and Yoghurt.
TIP: These are delicious cooked in the air fryer – simply brush with oil and cook.

1 cup buttermilk
2 cups all-purpose flour
2 tsp baking powder
1 pinch salt
Method
Combine ingredients in a mixing bowl and allow to stand for half an hour. Pour batter into waffle machine and cook until golden.
TIP: You can freeze this waffle batter for up to one month.
