Healthy and delicious lunchbox snacks

Even though you know how important it is to pack a nutritious lunchbox for your child, it can feel like a chore when you have to fit it into your busy morning schedule – but it needn’t be! With the help of these make-ahead recipes, you can take the hassle out of lunchbox prep and packing.

ROLY-POLIES

Make a batch of these pancakes for the week ahead, then just spread on the cream cheese and Squish 100% Fruit & Veg Puree in the morning, roll up and slice – it really is as easy as that. Squish 100% Fruit & Veg Puree makes it easy to ensure your little one gets their daily fruit and veggie fix, without the fuss. All Squish Purees are made using quality fruit and veg, and contain no preservatives, colourants or flavourants – and have no added sugar or starch.

Ingredients

3 eggs

1 Tbsp milk

1 x 110ml Squish 100% Pear + Sweet Potato Puree

3 Tbsp cream cheese

Method

Whisk eggs and milk together in a bowl. Pour a thin layer of mixture into a small (18cm pan) non-stick pan on medium heat and cook until batter is set. Repeat until batter is finished. Set pancakes aside and allow to cool slightly. Once you have finished cooking the batch, smear each pancake with cream cheese and a generous layer of puree. Roll up and slice.

TIP: Use any leftover puree as a dipping sauce.

SWEET POTATO ROSTIS

These rostis freeze well, so keep a batch in your freezer to add to your child’s lunchbox in the morning. Little one’s love the natural sweetness of sweet potatoes, plus they’re packed full of good-for-you beta-carotene, vitamin C and fibre. Use any leftover Squish 100% Fruit and Veg Purees you might have in your fridge as a dipping sauce. Squish Purees come with a resealable lid, so you need never waste a drop!

Ingredients

1 x 110ml Squish 100% Pear + Sweet Potato Puree

2 sweet potatoes, grated (about 400g)

1 Tbsp rice or corn flour

Dried herbs and seasoning

Vegetable oil for cooking

Method

Peel and grate sweet potatoes. Combine with puree and rice flour, then season. Mould mixture into patties and fry on a low heat in a little vegetable oil until golden.

TIP: Add grated cheese for extra flavour.

BERRY SMOOTHIE

Smoothies are a yummy way to ensure your child stays hydrated during their day away from home and are a smart lunchbox addition. This one is made with Squish 100% Summer Berries Puree, but you could use any of our fruity flavours, including Mango + Banana, Fruit Salad, or Banana + Strawberry.

Ingredients

1 x Squish 100% Summer Berries Puree

1 cup full cream dairy or coconut yoghurt

Method

Blend together well and serve.

TIP: To keep your little one’s lunchbox cool, pop a frozen Squish 100% Fruit Juice box in their lunch bag. They can have it as a slushy once it thaws.
