Winter comfort food suppers for toddlers
These quick and easy supper recipes are hearty, wholesome and packed full of natural goodness, making them the perfect winter comfort meals to keep your toddler smiling and their tummy full!
• MINI COTTAGE PIES
These mini cottage pies are a hit! If you are looking for a delicious way to get more veggies into your child’s diet, this dish is the perfect solution. Squish 100% Fruit and Veg Purees are made with quality fresh fruit and vegetables and contain no added preservatives, colourants or flavourants, making them a smart choice for your baby or toddler.
Ingredients
1 x 110ml Squish 100% Apple, Sweet Potato + Sweetcorn Puree
1 x 110ml Squish 100% Mixed Vegetable Puree
500g plant, chicken or beef mince.
1 small onion, chopped
1 carrot or courgette, grated
2-3 cups mashed potato
Method
Fry onion in a little oil, add mince and seasoning and cook until just brown. Add puree and vegetables. Simmer for five minutes or until mince is well cooked. Allow to cool. Load small freezer safe containers with mince then add a layer of mashed potato. Place the additional mini cottage pies in the freezer so you have supper on hand when you’re too busy to cook a meal from scratch.
TIP: You can also mix the Squish 100% Mixed Vegetable Puree into the mash for added flavour.
• CHILD-FRIENDLY CHICKEN CURRY
This tasty kid-friendly curry includes Squish 100% Butternut + Carrot Puree, but you can experiment by trying other Squish flavours, including Mixed Veg; Apple, Sweet Potato + Sweetcorn; or Sweet Potato, Apple + Cinnamon.
Ingredients
1 x 110ml Squish 100% Butternut + Carrot Puree
1Tbsp vegetable oil
½ onion, chopped
½ red pepper, seeded and chopped
200g chicken breast, cubed
½ tsp mild curry powder
½ tsp dried ginger
175ml chicken stock
Method
Heat oil in a pan over medium heat and fry the onion and pepper until softened. Add the chicken and spices. Stir well, browning the chicken and allowing the spices to toast. Add a little stock and deglaze the pan, then add the rest of the stock. Cover and simmer for 15 minutes. Take off the heat and stir through the puree. Serve with cooked rice.
TIP: Short on time? Make the sauce then add shredded rotisserie or leftover cooked chicken.
• VEGGIE PASTA BAKE
If you’ve got some cooked pasta in the fridge, you can have this supper on the table in less than half an hour. Your whole family will enjoy tucking in, so you might want to double the recipe!
Ingredients
1 x 110ml Squish 100% Butternut + Carrot Puree
1 x 110ml Squish 100% Mixed Vegetable Puree
4 cups cooked pasta
2 cups cheese sauce
½ cup grated cheddar
Method
Mix the purees into the cheese sauce and fold into cooked pasta. Place in an oven-proof dish, top with grated cheese and bake for 15 minutes until cheese has browned. Allow to cool slightly before serving.
TIP: Turn this into a lasagne by layering the Squish mixture between lasagne sheets, then cooking.
