Easy suppers you can freeze

Having a variety of suppers in your freezer – ready to heat and serve – can be a real lifesaver for busy parents and means you never have to compromise on giving your little one a healthy and nutritious dinner. These recipes freeze well, taste delicious, and are packed full of Squish goodness.

MY FIRST CHICKEN CURRY

There’s no reason for baby and toddler food to be bland! When you expose your child to a wide variety of tastes, textures and flavours you help set them up for a lifetime of healthy eating habits. This curry is mild, but full of flavour. We used Squish 100% Butternut + Carrot Puree, but you could vary the flavour by trying any of the Squish 100% Veg flavours, including Mixed Vegetable; Sweet Potato, Apple + Cinnamon; or Apple, Sweet Potato + Sweetcorn. Squish purees are made from quality fresh produce and contain no flavourants, colourants, or preservatives – plus they have no added sugar or starch.

Ingredients

1 x 110ml Squish 100% Butternut + Carrot Puree

1Tbsp vegetable oil

½ onion, chopped

½ red pepper, seeded and chopped

200g chicken breast, cubed

½ tsp mild curry powder

½ tsp dried ginger

175ml chicken stock

Method

Heat oil in a pan over medium heat and fry the onion and pepper until softened. Add the chicken and spices. Stir well, browning the chicken and allowing the spices to toast. Add a little stock and deglaze the pan, then add the rest of the stock. Cover and simmer for 15 minutes. Take off the heat and stir through the Squish puree. Serve with cooked rice.

TIP: No time to cook rice? Roll the curry up in a soft tortilla wrap or pop into a mini pita.

VEGGIE-PACKED COTTAGE PIE

This cottage pie recipe is super-versatile – and you can even make it totally vegetarian! Make a batch of mini pies using a muffin tray, then pop them in the freezer for the quickest, easiest flavour-packed supper. This recipe is also a tasty way to use up any half-finished Squish 100% Fruit and Veg Purees you might have in your fridge. Squish pouches come with screw-on lids, which means you never have to waste a drop.

Ingredients

1 x 110ml Squish 100% Apple, Sweet Potato + Sweetcorn Puree

1 x 110ml Squish 100% Mixed Vegetable Puree

500g plant, chicken or beef mince.

1 small onion, chopped

1 carrot or courgette, grated

2-3 cups mashed potato

Method

Fry onion in a little oil, add mince and seasoning and cook until just brown. Add puree and vegetables. Simmer for five minutes. Allow to cool. Load a muffin tray with mince then add a layer of mashed potato. Freeze.

TIP: Instead of adding Squish 100% Mixed Vegetable Puree while cooking, smooth it over mince before topping with mash – or mix it into the mash.

VEGGIE-LOADED BURGERS

Little ones love fun finger suppers – like these veggie-loaded burgers. They freeze really well – just place a square of wax paper between each burger to stop them from sticking together.

Ingredients

1 x 110ml Squish 100% Apple, Sweet Potato and Sweetcorn Puree

250g plant, beef or chicken mince

4 Tbsp corn or any chopped or grated vegetables

1Tbsp breadcrumbs

Method

Combine all ingredients in a bowl. Refrigerate for 30 minutes. Roll mixture into balls then flattening to form burgers. Lightly fry until cooked through. Serve on toasted rounds of bread.

TIP: These patties can be cooked in your air fryer.
