VEGGIE FRITTERS

Sweet potatoes are an excellent source of Vitamin A and E which helps build immunity. This super-affordable veggie forms the base of these naturally sweet fritters. If you’ve got any leftover Squish 100% Fruit and Veg Purees in your fridge, serve it alongside these fritters as a dip. Ingredients

1 x 110ml Squish 100% Butternut + Carrot Puree

500g sweet potato, cooked and mashed

1/3 cup rice or corn flour

Vegetable oil for frying

Method

Mix together mashed sweet potato and puree, then add flour. Heat oil in a large frying pan. Drop mixture into hot oil and allow to cook for 3 to 5 minutes, turning once. Drain on a paper towel and allow to cool.

TIP: These are delicious cooked in the air fryer – simply brush with oil and cook.

VEGGIE PASTA BAKE

When you’ve got little ones in the house, keeping a bowl of cooked pasta in the fridge means you can always prepare a wholesome and filling meal quickly and easily without resorting to wasting money on expensive convenience meals when you are in a hurry. You can switch up the flavour of this dish by using different Squish 100% Veggie Puree flavour combos. Ingredients

1 x 110ml Squish 100% Butternut + Carrot Puree

1 x 110ml Squish 100% Mixed Vegetable Puree

4 cups cooked pasta

2 cups cheese sauce

½ cup grated cheddar

Method

Mix the purees into the cheese sauce and fold into cooked pasta. Place in an oven-proof dish, top with grated cheese and bake for 15 minutes until cheese has browned. Allow to cool slightly before serving.

VEGGIE-LOADED BURGERS

Everybody loves a burger! These cost-effective mini burgers are loaded with extra veggies, elevating this ‘fast’ food to a well-balanced supper for your child to enjoy at the end of a busy day.

Ingredients

1 x 110ml Squish 100% Apple, Sweet Potato + Sweetcorn Puree

250g plant, beef or chicken mince

4 Tbsp corn or any chopped or grated vegetables

1Tbsp breadcrumbs

Method

Combine all ingredients in a bowl. Refrigerate for 30 minutes. Roll mixture into balls then flattening to form burgers. Lightly fry (or air fry) until cooked through. Serve on toasted rounds of bread.

TIP: These burgers freeze well – place a square of wax paper between each burger to stop them from sticking together.
