Mini Apple & Carrot Muffins

These muffins are packed with sneaky veg and get their sweetness from grated apple. Healthy and delicious!

1 x 110ml Squish 100% Butternut + Carrot
2 cups self-raising flour
1-2 carrots, grated
½ apple, peeled and chopped
¾ cup milk or dairy substitute
2 eggs
Pre-heat oven to 180°C and line a mini muffin pan with muffin cases.
Whisk Squish 100% Butternut + Carrot, eggs, and milk together then add flour.
Stir to combine.
Add grated carrots and chopped apple.
Bake for 20 minutes or until an inserted toothpick emerges clean.
Transfer to a wire rack and allow to cool.
Makes 16 mini muffins.
COOKING TIP:

Freeze cooked muffins and pop into lunchboxes to defrost in time for a mid-morning snack.
