Sweet Potato, Apple and Cinnamon Pancake Stack

Pancake stacks with fresh fruit make easy breakfasts or an afternoon treat.

160 g (1 cup) cake flour
5 g (1 tsp) baking powder
2 eggs
125 ml (½ cup) milk
1 x 110 ml Squish Sweet Potato, Apple and Cinnamon 100% Fruit and Vegetable Puree
15 ml (1 Tbsp) oil for frying
To serve: fresh fruit
Sift together the flour and the baking powder.
Whisk together the eggs, milk and Squish Sweet Potato, Apple and Cinnamon.
Whisk the Squish mixture into the dry ingredients and beat to a smooth thick batter.
Heat the oil over a very low heat in a non-stick frying pan.
Add even spoonfuls of the batter and shape into circles.
Cook until bubbles form on the surface of the pancake and then flip over and cook on the other side until the pancake is firm to the touch.
Repeat with the remaining batter.
Serve warm with fresh fruit.
COOKING TIP:

Use baby’s milk (formula or breast) to prepare the pancakes if preferred. Fry the pancakes in different sized circles and then use those along with some fresh fruits to create fun and creative food animals.
