Easy Veggie Pasta Sauce
30 minute Italian-style pasta sauce, great for spreading on pizza bases or tossing over pasta.
30 ml ( 2 T) olive oil
1 medium onion, finely chopped
1 clove garlic, crushed
1 x 410 g can chopped & peeled tomatoes
1 x 110ml Squish Mixed Vegetable Puree
salt and freshly cracked black pepper
30 ml (2 T) basil leaves, finely chopped
To serve: cooked pasta and grated parmesan cheese
Heat the oil in a medium saucepan. Add the onions and fry until softened.
Add the garlic and fry for a few minutes more.
Add the tomatoes and the Squish Mixed Vegetable Puree.
Simmer the sauce over a low heat for 15 minutes or until thickened.
Remove from the heat, season to taste and stir in the fresh basil.
Allow to cool slightly.
To serve, spoon the pasta sauce over the pasta and sprinkle with parmesan cheese.
