Packed snacks for happy road trips
Heading off on a holiday with your toddler is an exciting adventure. But as any parent knows, a hungry toddler is a cranky toddler. Make sure your road trip is a happy one by packing healthy and nutritious snacks for your toddler to enjoy while you’re on the road. Try these quick and easy recipes:
• SWEET POTATO ROSTIS
These rostis are perfect finger food for snacking on the move. Sweet potatoes are packed with beta-carotene, vitamin C and fibre and will help keep your toddler feeling satisfied. They are made using Squish 100% Pear + Sweet Potato Puree. Squish Purees are made using only the best quality fruit and vegetables and contain no nasties – so they are free of colourants, preservatives and flavourants, and have no added sugar.
Ingredients
1 x 110ml Squish 100% Pear + Sweet Potato Puree
2 sweet potatoes, grated (about 400g)
1 Tbsp rice or corn flour
Dried herbs and seasoning
Vegetable oil for cooking
Method
Peel and grate sweet potatoes. Combine with Squish 100% Pear + Sweet Potato Puree and rice flour, then season. Mould mixture into patties and fry on a low heat in a little vegetable oil until golden.
TIP: For added flavour grate a little cheese into the mixture before you roll into patties.
• FRUIT CRUNCHIES
These sweet treats are packed with natural goodness and fibre: coconut, dried apricots and Squish 100% Apple Fruit Puree. To switch things up, try using a different flavour of Squish 100% Fruit Puree, there’s a whole range of flavours to choose from, including Pear + Prune, Summer Berries, Pear, and Mango and Banana.
Ingredients:
1 cup rolled oats
½ cup desiccated coconut or ground almonds
¾ cup cake flour
½ tsp baking powder
¼ tsp bicarbonate of soda
⅓ cup dried apricots, finely chopped
65 g butter
¼ cup brown sugar
1 x 110 ml Squish 100% Apple Puree
Method:
Place the oats, coconut (or nuts) and cake flour into a bowl and stir to mix. Add the baking powder and bicarbonate of soda. Add the apricots.
In a small saucepan melt the butter and the sugar together. Whisk in the Squish 100% Apple Puree and leave to cool.
Add the apple mixture to the dry ingredients and stir until well blended. Press the mixture into a baking pan lined with baking paper.
Bake in an oven that has been preheated to 160°C for 30 minutes or until golden brown.
Remove from the oven and slice into bars in the pan. Leave to cool.
TIP: Add a couple of Squish 100% Yogi pouches to your “padkos” cooler bag. Squish pouches are super-convenient for on-the-go snacking and have a resealable screw top lid.
• CREAM CHEESE ROLL-UPS
Prep a batch of these tasty roll-ups the night before you hit the road – your toddler will enjoy every bite. They’re easy to eat and mess-free!
Ingredients
3 eggs
1 Tbsp milk
1 x 110ml Squish 100% Fruit Salad Puree
3 Tbsp cream cheese
Method:
Whisk eggs and milk together in a bowl. Pour a thin layer of mixture into a small (18cm pan) non-stick pan on medium heat and cook until batter is set. Repeat until batter is finished. Set pancakes aside and allow to cool slightly. Once you have finished cooking the batch, smear each pancake with cream cheese and a generous layer of Squish 100% Fruit Salad Puree. Roll up and slice.
